text-align: justify;"> </p><p style="line-height: 1.5em; text-align: justify;">早在几千年前,古人就开始了锅巴的制作,锅巴的历史可谓是源远流长。说起“锅巴”之名,还是出自我们安徽呢!以前沿江及皖南山区东至一带有些人家吃饭时是不准吃锅巴的,他们把锅巴积攒起来,晒干留待春荒之时当粮食。</p><p style="line-height: 1.5em; text-align: justify;"><br/></p><p style="line-height: 1.5em; text-align: justify;">他们称锅巴叫“靠山”,看作抵挡饥荒灾害日子的“依靠之山”。</p><p style="line-height: 1.5em; text-align: justify;"><br/></p><p style="line-height: 1.5em; text-align: justify;">时过境迁,不知不觉中市场开始流行一种更加新奇味美的小吃。</p><p style="line-height: 1.5em; text-align: justify;"><br/></p><p style="line-height: 1.5em; text-align: justify;">东至农家锅巴饭味美而易做先将3根长形红心芋削皮切一厘米厚的片待用。再将黑猪肉切成0.3厘米的片,分别加入盐、鸡精、糖、生抽、老抽、蚝油调味拌入,再加入红芋粉拌好待用。其次取香米750克,用清水洗净沥干,放入电锅内,加入一瓶半农夫山泉水,盖上锅盖,旋转至煮饭键。最后待米饭进入干水时,依次在饭上面摆放红心芋和红芋粉蒸肉生坯,再盖上盖,直到饭熟,肉香即可食用。</p><p style="line-height: 1.5em; text-align: justify;"> </p><p style="line-height: 1.5em; text-align: justify;">相传,当年朱元璋与陈友谅大战鄱阳湖路过东至,双方拼杀得昏天黑地,将疲兵乏,他苦苦思索影响作战的诸多不利因素,其中重要的一点就是将士们长途奔袭,粮食匮乏切容易变质。东至县昭潭镇的巧妇们想出了一个好办法:她们将大米淘洗干净,放在甑里蒸熟,冷却晾干,磨成细米粉,再用开水调和揉匀,将米粉搓成一个个鸡蛋大的粉团,中间戳个洞,放入炒好的菜馅,封上口,上蒸笼蒸透。这个类似汤圆状的最早的蒸米粑就做成了。这样做好的蒸米粑越嚼越甜,粑内包有新鲜的菜馅,因而非常可口,它最大的特点是不怕水浸,不易发馊,十天半月都不会坏,平时作战带上它非常方便,一顿吃上两个就饱了。将士们吃了蒸米粑,作战时如有仙人相助,打败了陈友谅,故此,朱元璋又将这种食粮称之为“仙米粑”,也就是后来的东至米饺。</p><p style="line-height: 1.5em; text-align: justify;"><br/></p><p style="line-height: 1.5em; text-align: justify;">其做法也尤为简单。先准备馅料,用煮开的水和粉,将粉和成光滑的粉团;再取乒乓球大小的团搓圆,用手掌压扁捏开;最后放入一定量馅料后,像包饺子一样捏合,用带孔得蒸架蒸熟即可,在东至的大街小巷都能看到这一道美食。</p><p style="line-height: 1.5em; text-align: justify;">羊肚菌还有这样一个故事,相传明朝第十三位皇帝,在援朝逐倭之战后,体虚羸弱,多日无法进食。传唤多名太医医治无果,恰巧宫中有一位妇人想起了家乡的羊肚菌汤,于是按照家乡的方法将羊肚菌熬煮后让其服下,一个时辰后,皇帝渐渐面色红润,自此羊肚菌便被列为皇家贡品。东至本地人则是将其与新鲜的老鹅相炖于一锅,文火慢熬,菌汤鲜汁与鹅肉玉润彼此成就,香气满溢。就连许多外地人品尝过后都赞不绝口。</p><p style="line-height: 1.5em; text-align: justify;">说起泥鳅想必大家都不陌生泥鳅是一种水生动物,通常生活在水田里边,但是现在市面上买到的泥鳅大多数都是人工养殖的泥鳅。泥鳅还被称为“水中人参”,是民间非常好的进补食材。泥鳅的口感也比较细腻,吃起来比普通的肉类多了一些鲜甜滋味。但是在东至,吃法又有一些不同,我们大多数都是将泥鳅用来干煸,混合着各种干辣椒、花椒、孜然等等,之说以这样还是由于这样一个故事--东至南部山区,是一块红色土地。当年红军游击队在此活动时,地方伪军时常袭扰游击队,他们依仗对地形的熟悉,日夜不分,游离不定,让游击队对他们痛恨不已。游击队员把这些伪军当做溪涧中善于躲藏的泥鳅。在做菜时,总喜欢把手中铁铲煸压泥鳅,仿佛炽热铁锅中条条泥鳅就是个个伪军,圆滚滚泥鳅在煸压中变形成条索状,不复原有模样。自此,干煸泥鳅成了当地一道小菜。</p><p style="line-height: 1.5em;
